I’m looking to make a interactive kiosk. What I would like to do is every 500 customer would get a free item. Every 10 user would get a 10% coupon for an item. How can this be done?

This can be achieved by using a Simple Counter Interface Asset.
In order to have it not reset at each experience restart and manage persistence, you may want to link it either to a local excel file with an Excel Interface Asset or to an online database through Airtable for instance with a REST-based Interface Asset.
As these steps are a bit advanced in Intuiface experience making, I recommend you to do the Self-Guided Training with Step-by-Step Tutorial first, then watch some of the Webinars (we have a dedicated one about Excel and Airtable here).
