May be a bit of a stupid question but it looks like I’ve pressed something on my keyboard and changed one field of a spreadsheet to a date field?
How would I go about reverting it to a normal entry field

This isn’t a stupid question at all. As indicated in this article section, the second row of your Excel file (the first row below the column titles) is used to determine the data type of each column. You may have changed the value of Time in in this row. You can probably force the cell format to “text” within Excel to revert to the original data type.
Once Excel file is modified, saved and closed, don’t forget to delete this action and create it again so it uses the “new” format for all action parameters.
