I have a touchscreen, which I know intuiface can do, click things to trigger information panels etc. M question is this, can I click a button on my touchscreen, make it transition to do something, and then also have it trigger a movie play on a projector, for example?

What you describe wanting to do seems similar to one of the samples that we offer:
This sample uses two experiences: “Video Wall - Remote Control” and “Video Wall - Display”.
Using the Video Wall - Remote Control experience, you can drag and drop a video thumbnail into one of four zones, which will cause that video to play in the Video Wall – Display experience in the specified zone.
The Video Wall - Display experience is intended to be run on a large-format display or at an event running on a video wall, while the Video Wall - Remote Control is intended for a touch display or tablet.
This example might be more “involved” then what you are looking to do but it still provides you with how to setup the function of choosing a video on the touchscreen and have it display on the larger screen/projector.
